本文梳理了天津菜作为中国烹饪的风味流派,经过兼收并蓄、借鉴融合,在全国餐饮业的影响和地位,记述了近几年来,天津市弘扬天津地方餐饮文化的一系列重大举措和成果。本文对“八大菜系”的提法进行了剖析,提出了“八大菜系”是悖论、“八大菜系”不能代表中国烹饪全貌的观点,并提出了中国菜划分的新思路、新方法,认为弘扬地方菜是中国烹饪发展的方向,中国各地方菜是平等的、包容的、相互借鉴和共同发展的。
<<This article describes Tianjin cuisine as a flavor school of Chinese cuisine. After merging and learning from each other,the cuisine has its impact and status countrywide. It describes the major initiatives and achievements of Tianjin’s local catering culture in recent years. This article analyzes the formulation of the eight major cuisines,and proposes that the eight major cuisines are paradoxes. The eight major cuisines cannot represent the Chinese cuisine in full. It proposes new ideas and new methods for the classification of Chinese cuisine,and believes that the promotion of local cuisine is a development of Chinese cooking. All local Chinese cuisines are equal,inclusive,learn from each other,and develop as a whole.
