瘦肉精事件给中国消费者和猪肉市场造成持续恶劣影响,本文以可追溯猪肉为研究对象,设立瘦肉精检测信息、可追溯安全信息、外观、价格4个属性,采集了无锡市298位消费者的调查数据,利用全轮廓联合分析法评估不同属性对消费者的相对重要性与属性中各层次的效用分值,在此基础上进行了11种市场方案的模拟,估算相应可追溯猪肉的市场份额。研究结果表明,消费者最看重外观属性,对瘦肉精检测信息属性的重视程度仅略低于价格属性,高于可追溯安全信息属性;与无瘦肉精检测信息的可追溯猪肉相比,研究显示瘦肉精检测结果合格的可追溯猪肉的市场份额提高了约30%,且消费者愿意支付的溢价上浮10%。因此,对动物类可追溯食品加贴额外的激素、抗生素或非法添加剂等检测结果信息具有重要的价值。
<<The event of clenbuterol continues to cause bad influence to the Chinese consumers and pork market.This paper takes the traceability of pork as the research object setting up clenbuterol detection information,the traceability information security,appearance,and price as four attributes.The paper uses the full profile conjoint analysis method to evaluate the relative importance of different attributes and the utility of level with the data of 298 consumers in Wuxi city.And the research also estimates the market share of traceable pork under the 11 kinds of market simulation scheme.The results show that the consumers value the appearance most,and the value of the detection information of clenbuterol is slightly lower than that of the price,which is higher than the property of the traceability security information.Compared with the traceable pork without the detection information of clenbuterol,consumers are willing to pay a 10% premium price of traceable pork with the test of clenbuterol qualified,and the market share of the traceability pork which shows the detection information of clenbuterol increase about 30%.Therefore,it is of great value to label with additional detection information of hormones,antibiotics or other illegal additives in traceable animal.
