食品加工链条的延长、与经济发展伴随而来的环境污染等问题使得食品安全问题变得更加复杂和多样。就波及的范围和程度而言,食源性疾病引发的食品安全事件是当前全球尤其是我国最突出的食品安全问题。尽管如此,消费者对食源性疾病的风险和危害的认识却明显不足,国内学者对这方面的研究也几近空白。本文通过大范围的问卷调查,以无锡市834个消费者样本为基础数据,运用无序多分类Logistic回归模型分析消费者对食源性疾病的风险感知。研究结论显示,受教育程度更高、经常洗砧板和刀的消费者对食源性疾病的感知水平更高,更倾向于认为食源性疾病是重大的风险。此外,收入更高、更熟悉致病菌、常洗砧板和刀的消费者更倾向于认为规范的食品准备程序可以防范食物中毒。据此,政府应发挥宣传载体的作用,大力宣传食品安全知识,消除消费者的认知误区,科学引导消费者形成正确的饮食习惯和行为。同时,将消费者食品安全教育纳入基础教育体系,使食品安全教育常态化、体系化,成为学校正规教育的一部分,从而进一步提高消费者对食源性疾病风险的感知水平。
<<Food safety incidents caused by food borne disease are currently the world’s most prominent food safety issues,so is it in china. In this paper,we use Multinomial Logistic Model to analyze the risk perception of food borne diseases of 834 consumers in Wuxi city. The conclusion of the study shows that,Consumers with higher education are more likely to think that foodborne illness is a major risk,as well as the consumers often wash cutting boards and knives. Consumers who have higher income,and are more familiar pathogens,often wash cutting boards and knives,tend to think that the specification of food preparation procedure can prevent food poisoning. Accordingly,it is recommended that the government should vigorously promote food safety knowledge,scientific guide consumers to form a correct eating habits and behavior,to further enhance consumer awareness of foodborne illness and risk perception.
