本文设定具有事前质量保证功能与事后追溯功能的可追溯猪肉信息属性,以江苏无锡604位消费者为样本,基于融合实验拍卖法和菜单选择实验法的序列估计方法,研究可追溯猪肉信息属性的消费偏好和需求弹性。结果表明,属性的价格是影响消费者对供应链追溯属性选择的重要因素,猪肉品质检测属性、“供应链+内部”追溯属性分别是消费者最偏好的具有事前质量保证与事后追溯功能的两个属性。因此,信息属性的设置应完整地覆盖全程猪肉供应链的风险环节,努力为市场提供多层次信息属性组成的可追溯猪肉,并通过定制化的方式为市场提供具有事前质量保证功能的品质检测属性的可追溯猪肉,这对我国形成可追溯猪肉市场体系具有积极意义。
<<In this article,information attributes of traceable pork with pre-incident quality assurance and post-incident traceability were established. Firstly,consumer preferences for information attributes regarding pre-incident quality assurance and post-incident traceability,as well as the interrelationships between these attributes,were investigated for 604 consumers in Wuxi City,Jiangsu Province,China based on the MVP model,using sequential elicitation,which combined a Becker-DeGroot-Marschak(BDM)auction and menu-based choice experiment. The results suggest that attribute price was an important factor in consumer choice of supply chain traceability. Furthermore,under budgetary constraints,substitute or complementary relationships between attributes were identified,out of which pork quality inspection and supply chain + internal traceability were the two attributes most preferred by consumers for pre-incident quality assurance and post-incident traceability,respectively. Therefore,establishing information attributes should cover all risk processes throughout the pork supply chain to provide traceable pork with multi-level information attributes to the market. Moreover,traceable pork with quality inspection that allows pre-incident quality assurance should be provided to the market by customization. Such efforts will positively contribute to the development of a traceable pork market system in China.
