    品牌、认证与消费者信任形成机制——以有机牛奶为例

    摘要

    以“三聚氰胺事件”为代表的食品安全事件,沉重打击了消费者对乳制品质量安全的信心,消费者对“洋品牌”乳品开始表现出较为强烈乃至非理性的偏好。品牌和认证是供应商传递食品质量信息的有效手段,探究消费者对中外品牌或认证是否存在不同信任倾向,具有重要的现实应用价值。本文基于山东省570个消费者样本数据,探究消费者对中国牛奶、欧盟品牌牛奶和经过认证的有机牛奶的信任倾向,并运用结构方程模型分析消费者信任的形成机制及其差异。结果表明,消费者的个体特征、感知价值、有机食品知识及行业环境对消费者信任产生显著正向影响,而食品安全意识和信息交流对信任的影响较为复杂;消费者对中国牛奶、欧盟品牌牛奶和经过认证的有机牛奶的信任存在差异,且其形成机制也略有不同。提升公众的消费信心,应着力于推动有机知识的宣传普及、增加消费者体验以及强化行业监管,并根据消费者的信任差异制定相应策略,从而提升消费者的信任水平,完善中国有机牛奶产业的发展决策。

    Abstract

    Food safety crisis represented by “melamine incident” attacked consumers confidence in quality safety of dairy products,consumers’ preferences for “foreign brands” dairy were intense and irrational. Brands and certifications are effective method for suppliers to delivery food quality information. Exploring whether consumers trust in Chinese and foreign brands or certifications are different has the important practical application value. This paper based on the 570 consumer data in Shandong Province,studied consumers trust in Chinese and EU brands or certifications organic milk,then used the Structural Equation Model to study the formation mechanism of consumers trust and its differences. The results indicated that consumers’ own characteristics,perceived value,organic food knowledge and industry environment have significant effects on consumers trust,but the effects of food safety awareness and information exchange are complex. Consumers trust in Chinese and EU brands or certifications are different and its formation mechanisms are also different. In order to promote the public consumption confidence,we should focus on promoting organic knowledge popularization,increasing consumer experience and strengthening the industry regulation. And we should develop corresponding strategies according to consumers different trusts in Chinese and foreign brands or certifications so as to enhance the level of consumers trust. Meanwhile,it has reference value to promote the development of organic milk market.
