本文尝试运用模糊集理论与决策实验分析方法,研究影响消费者对食品添加剂风险感知的各种因素间的相互关系并识别关键因素。研究显示,消费者对食品安全状况的关注度、消费者的健康意识与识别能力、消费者从外界获取的信息、消费者的科学素养和政府的监管力度是5个最关键的因素。研究结论的政策含义是,政府部门、企业和舆论应当通过各种宣传方式提高消费者对食品添加剂的认知水平,强化食品安全消费基本知识的普及与教育,提升公众的科学素养、健康意识与识别能力;政府的监管力度是关键因素之一,强化政府监管机制是当务之急,同时要及时发布政府监管的信息与所进行的努力,恢复公众对食品市场的信心。
<<In recent years,the frequent food safety issues happened all over the world,consumers are increasingly concerned about food safety issues,especially food additives. It’s important to study the relationship of factors influencing on the perception behavior of food additives and identify the key factors,so as to lead consumers’perception of food additives.
This essay uses fuzzy DEMATEL method to study the relationship of factors influencing on the perception behavior of food additives and identify the key factors and so on. It indicates government’s supervision,enterprises’expectation benefits of economic,the size of enterprises,the integrated level of supply chain and consumer’s demand and preference are key factors.
It’s emergent to perfect the mechanism of government’s supervision,strengthening the basic knowledge of food safety consumption,promoting scientific literacy,health awareness and recognition ability of the public. Government supervision is one of the key factors. Strengthen government supervision mechanism is a pressing matter of the moment,and timely release information and the government’s efforts supervision,so as to restore public confidence in the food market.
