本文采用1995~2012年的统计数据,运用AIDS模型对陕西省城镇居民的食品消费进行了分析。研究结果显示:居民对于多数食品的消费缺乏收入弹性,但是禽类、水果和奶类食品的消费受收入的影响较大;低收入居民粮食消费的收入弹性要大于高收入居民,随着时间的推移,收入的影响都会降低;居民对肉类和蔬菜的消费受收入的影响也在增大,对较高收入层次的居民来说,这两类食品的消费对收入的变化已经不敏感;居民对大多数食品价格的变化反应不敏感,且居民粮食、肉类和蔬菜消费的自价格弹性绝对值均大于其收入弹性。研究表明:以收入拉动陕西城镇居民食品消费和提升营养摄入的空间是有限的;保障陕西省蔬菜供给的数量和多样性,对于从整体上改善陕西城镇居民的营养结构具有促进作用;陕西省水果类食品需要必要的消费引导和生产扶持政策。
<<This paper used the statistical data from 1995 to 2012,based on the AIDS model,analyzed urban residents’ food consumption in Shaanxi province. The results show that residents are lack of income elasticity in consumption of the most foods,but fruits,poultry and dairy consumption are greatly affected by the income;income elasticity of food consumption of low-income residents is higher than that of high-income groups,as time goes on,the influence of income will reduce;residents’ meat and vegetable consumption is increasing affected by the income,while of high-income residents’consumption on the two types of food is not sensitive to income changes. Residents are not sensitive to the change of most food price. The absolute value of price elasticity of residents’ consumption of grain,meat and vegetables are greater than their income elasticity. Research shows that the method that increasing Shaanxi urban residents’income to promote food consumption and nutrition absorption is not work;ensure the supply of vegetables is adequate and diversity in Shaanxi will promote the overall improvement of Shaanxi urban residents nutrition structure;Shaanxi food like fruit need necessary consumption guide and production support policies.
