本文旨在探讨食品摊贩的规范管理,确保公众饮食安全,并保留地方特色,使之成为城市餐饮中的一道风景线。本研究通过文献检索,梳理概括了我国食品摊贩的现状;抽取了上海部分街道、乡镇,采用问卷调查方式,对地方食品摊贩作了现状分析,借鉴了新加坡食品摊贩的管理经验和上海“爱心帮帮车”的经营管理模式,就我国地方食品摊贩的管理提出了相应的监管对策。建议采用综合治理模式对食品摊贩进行有效管理,并提出两种可资借鉴的监管模式,以保障公众饮食安全。
<<This article aims to review the standardized management of food vendors,ensure public food safety and preserve the local characteristics,which makes the landscape of city’s catering. This study used literature search,sorted and summarized the current status of food vendors in China. This research implemented the questionnaire survey by sampling of streets and towns in Shanghai. It analyzed the current status of local food vendors,and proposed the corresponding regulation methods of local food vendors management by referring the management experiences of food vendors in Singapore and management models of the “Charity Help Car” in Shanghai. We suggested to implement integrated governance model for effective management of food vendors,and proposed two regulatory approaches to protect public food safety.
