    蒙自过桥米线文化意蕴与品牌提升研究

    摘要

    蒙自过桥米线是汉、彝等民族饮食习俗和边地文化与中原文化长期交融的产物。数百年来,从业者一直摸索着过桥米线文化建构、文化品牌塑造之路。过桥米线是古代中国饮食文化的传承,所用配料、品类取名、吃的仪式感,都展现出极富地域色彩的象征文化意蕴,日常生活的美好、人生美德都在一碗米线中得到凸显。个体经营者应琢磨自身品牌核心价值;整个产业应形成分布在全国各大中城市的品牌家族;生产米线的小微企业应有自己的品牌个性、系列子品牌,以品牌来带动全产业链建设。蒙自过桥米线品牌应彰显集聚效应,美食街区、小镇与过桥米线是共生关系,能创造景观经济,品牌也能在集聚生产中成长。蒙自过桥米线品牌应体现一定的规模效应,适应不同群体的文化需求、不同层次的市场需要,实现米线产业发展规模化,形成以超市、连锁企业经营等不同市场形态下的产销体系。过桥米线文化是蒙自城市文化经济建设重要内容,是蒙自走向世界的品牌形象。

    Abstract

    Mengzi Crossing-the-Bridge Rice Noodles is the product of the long-term integration of the dietary customs of Han,Yi and other ethnic groups with the border culture and the Central Plains culture. For hundreds of years,practitioners have been exploring the road of cultural construction and cultural brand building of crossing-the-bridge rice noodles. Crossing-the-bridge rice noodles is the inheritance of ancient Chinese dietary culture,for which the ingredients,category names,and the sense of ritual of eating all show the symbolic cultural implication full of regional characteristics. The beauty of daily life and the virtues of life are all highlighted in a bowl of rice noodles. Individual operators should consider the core value of their own brands;The whole industry should form a brand family distributed in large and medium-sized cities throughout China;Small and micro enterprises engaged in the production of rice noodles should have their own brand personality and series of sub-brands to drive the construction of the whole industry chain with the brands. The brand Mengzi Crossing-the-Bridge Rice Noodles should highlight the agglomeration effect. There is a symbiotic relationship between the food streets,towns and the crossing-the-bridge rice noodles,which can create a landscape economy and the brand can also grow in agglomeration production. The brand Mengzi Crossing-the-Bridge Rice Noodles should reflect a certain scale effect,adapt to the cultural needs of different groups and market needs of different levels,realize the development of rice noodles industry on a large scale,and form a production and marketing system operated with supermarkets and chain enterprises under different market forms. The crossing-the-bridge rice noodles culture is an important part of urban cultural and economic construction in Mengzi,as well as the brand image of Mengzi to go global.
