    2022年中国地方特色餐饮业高质量发展报告

    摘要

    地方特色餐饮业是餐饮经济的重要组成部分,是地方文化经济特色所在。疫情防控常态化时期,坚定文化自信、抢抓转型机遇,是地方特色餐饮业高质量发展的前提。地方特色餐饮业经历曲折,特色化发展之路明晰,餐饮品质与技艺有保障、有提升,全天候经营、全面融入地方建设,是当前地方特色餐饮业发展态势。产业发展不平衡、不充分,产业发展自信不足、文化创造力不强,有实力、引领能力的品牌连锁企业少,基础设施薄弱、业态融合不畅,特色弱化、产业培育踯躅前行,是当前地方特色餐饮业发展中存在的主要问题。聚焦产品供给质量、实现结构优化升级,统筹优化地方特色餐饮业布局,重点发展品牌连锁企业,发展好旅游餐饮,为地方文旅融合赋能,推动数字化、智能化、全产业链建设,鼓励地方特色餐饮业优化特色、“走出去”,搭建好公共服务平台等都是推动地方特色餐饮业高质量发展的路径。

    Abstract

    The local characteristic catering industry is an important part of the catering economy as well as the local cultural and economic characteristics. During the period for regular epidemic containment,strengthening cultural confidence and seizing the transformation opportunities are the premise for the high-quality development of the local characteristic catering industry. After experiencing twists and turns,the local characteristic catering industry clearly takes the road of characteristic development,with the catering quality and skills guaranteed and improved,all-weather operation and comprehensive integration into local construction are the current development trend of the local characteristic catering industry. Unbalanced and insufficient industrial development,lack of self-confidence in industrial development,weak cultural creativity,few brand chain enterprises with strength and leading ability,weak infrastructure,poor integration of business forms,weakened characteristics and sluggish industrial cultivation are the main problems existing in the development of local characteristic catering. Focusing on the quality of product supply,realizing the optimization and upgrading of the structure,making overall planning of and optimizing the layout of the local characteristic catering industry,focusing on the development of brand chain enterprises,developing tourism catering,empowering the integration of local cultural tourism,promoting digital and intelligent construction of the whole industry chain,encouraging the local catering industry to optimize its characteristics,“go global”,and building a public service platform are all the pathways to promote the high-quality development of the local characteristic catering industry.
