    滇南乡愁美食文化记忆——基于建水县美食文化调查与分析

    摘要

    滇南建水美食文化资源富集,形成了汉文化浸润下的饮食传统与少数民族饮食习俗,美食文化呈现出“各美其美、一地多元”的特征,汽锅与汽锅鸡等美食承载着美食文化记忆。美食文化记忆活化,饮食文化资源再挖掘、再利用推动了古城风貌恢复、创意街区建设、乡村建设及其文化旅游发展,游客沉浸于美食文化乡愁之旅中。“美食之都”是建水美食文化传承与建设方向,应调动政府、企业、社会各方力量积极作为,以发展具有地域文化色彩的乡愁美食为契机,实现建水饮食业、文化旅游业高质量发展,城市转型升级。

    Abstract

    With the rich resources of Jianshui food culture in southern Yunnan,the food tradition and ethnic minority food customs under the influence of the Han culture have been formed. The food culture presents the characteristics of “each has its own beauty and each place has its own diversity”. The steam pot,steam pot chicken and other delicious food carry the memory of food culture. The activation of food cultural memory as well as the re-excavation and reuse of food cultural resources have promoted the restoration of the style of the ancient city,the construction of creative blocks,rural construction and the development of cultural tourism,making tourists immersed in the nostalgic journey of food culture. The “City of Food” is the direction of cultural inheritance and construction of cuisine in Jianshui. The government,enterprises and society should be mobilized to take active action,utilize the opportunity of developing nostalgic food with regional culture to achieve high-quality development of the catering industry and cultural tourism industry and urban transformation and upgrading in Jianshui.
