2020年江苏餐饮业经历了前所未有的重创,餐饮企业在度过洗牌、生存、发展阶段后,扭转经营思路,调整市场布局,提振重塑信心,将疫情损失降到最低点,并利用各自优势,拓展经营业态,推动餐饮质量提高,降本提效取得一定的效果。在常态防疫情况下,坚持走品牌之路,打造绿色餐饮,提升行业整体素质等,亟待向纵深发展。本文从四个方面,对全省消费市场运行、发展特点、存在的问题以及对策建议等进行客观分析,提出解决方法,保证全省餐饮业健康有序地推进发展。
<<In 2020,Jiangsu’s catering industry suffered an unprecedented heavy blow. After the stage of reshuffle,survival and development,the catering enterprises reversed their business ideas,adjusted the market layout,boosted and reshaped their confidence,minimized the loss brought by COVID-19,made use of their respective advantages to expand business formats,promoted the improvement of catering quality,and achieved certain results in reducing costs and improving efficiency. Under the situation that epidemic containment becomes normalized,it is urgent to adhere to the road of brand,create green catering,improve the overall quality of catering and seek development in an in-depth way. This paper makes an objective analysis of the operation,development characteristics,existing problems,countermeasures and suggestions of the provincial consumer market from four aspects,and puts forward solutions to ensure the healthy and orderly development of the catering industry throughout the province.
