云南少数民族众多、民族文化资源丰富,民族餐饮是其餐饮文化上的一大亮点和产业支柱。受历史及社会经济发展水平的影响,长期以来云南民族餐饮产业发展存在诸多问题,处于低水平发展状态。进入新时代,人民对美好生活的美食需求越来越高,云南省餐饮行业抓住机遇,尝试了一系列以互动型民族歌舞餐厅、民族宴席、创新滇菜、特色小吃为主要形式的实践探索,使云南民族餐饮逐渐从非主流走向主流,市场份额不断扩大,影响力不断提高,逐渐形成了民族餐饮发展的云南模式。总结云南民族餐饮发展的经验主要有几点值得推广和借鉴:政府高位引领并给予政策支持,多部门联动合作,充分发挥优势、扎根市场、创新发展,与高原特色农业、文化产业、大健康产业等融合发展。

Affected by the history and the level of social and economic development,there have been many problems in the development of Yunnan ethnic catering industry for a long time,which is in a low-level development state. In the new era,people’s demand for delicious food in a better life is getting higher and higher. The catering industry in Yunnan Province has seized the opportunity to try a series of practical explorations in the form of interactive ethnic song and dance restaurants,ethnic banquets,innovative Yunnan cuisine and special snacks,which makes Yunnan ethnic catering gradually change from an alternative to the mainstream,makes the market share continue to expand,makes the influence continue to improve,and gradually forms the Yunnan model for the development of ethnic catering. To summarize the experience about the development of Yunnan ethnic catering,there are several points worthy of promotion and reference:With high-level government guidance and policy support,multi-sector linkage cooperation,it aims to give full play to the strengths,take root in the market,make innovative development,and realize integrated development with the plateau characteristic agriculture,cultural industry and big health industry.
