    2019年中国城市夜间美食经济的特点与实践研究

    摘要

    美食作为夜间经济中的常规内容,一直伴随着城市商圈改造和城镇化进程而勃兴,因此“夜间美食”不是新鲜词,更不是新鲜业态,但结合当前夜间经济的政策背景和实践导向,特别是“后疫情”下市井烟火气恢复的迫切性,有必要系统开展夜间美食经济的研究,以助于更好地发挥美食在夜间经济中“不仅仅是吃喝”的综合效应。该文跳出“夜间”的时间视角,从空间维度分析了夜间美食供给的特点,指出了夜间美食在消费时段、消费空间和消费体验三个方面的需求特殊性,并重点剖析了当前在夜间美食经济实践中存在的误区,提出了解决有效供给和精准供给的美食与文化、美食与新媒体融合的建议。

    Abstract

    As a regular content of nighttime economy,fine food has been booming along with the transformation of urban business district and the process of urbanization,so “nighttime food” is not a new word,let alone a new type of business. However,considering the policy background and practice orientation of the current nighttime economy,especially the urgency of the recovery of worldly life in the “post-epidemic” period,it is necessary to carry out systematic research on the nighttime food economy,so as to better exert the comprehensive effect of “not just eating and drinking” for food in nighttime economy. Out of the temporal perspective of “nighttime”,this paper analyzes the characteristics of nighttime food supply from the spatial dimension,points out the particularity of the demand of nighttime food in three aspects of consumption time,consumption space and consumption experience,and emphatically analyzes the misunderstanding existing in the current nighttime food economic practice,and puts forward the suggestions on the integration of food and culture,food and new media to solve effective supply and accurate supply.
