新冠肺炎疫情的发生让以餐饮业为代表的生活服务业遭受严重冲击,经营者普遍面临需求萎缩带来的现金流紧张、原材料积压致使残败成本激增等问题的考验。短期内,互联网餐饮平台在为企业对接需求、降低成本支出方面发挥了“生命线”的作用。长期看,疫情的发生客观上重塑了人们对互联网餐饮的消费习惯,也加速了中小餐饮商户拥抱数字化平台的进程。本文首先梳理了疫情期间互联网餐饮消费的结构特征,分析了餐饮业数字化的现状和问题,提出了以“平台”为核心的数字化新基建概念和内涵,阐释了餐饮业实现数字化的社会价值,最后给出了相关政策建议。
<<The outbreak of COVID-19 has caused serious impact on the life service industry represented by the catering industry. Operators are generally faced with the problems of cash flow tension caused by the shrunk demand,and sharp increase in the cost caused by the overstocking of raw materials. In the short term,the Internet-based catering platform has played a “lifeline” role in connecting demand and reducing costs and expenditures for enterprises. In the long run,the outbreak of the epidemic has objectively reshaped people’s consumption habits towards Internet-based catering,and accelerated the process of small and medium-sized fast food merchants to apply the digital platform. This paper firstly sorts out the structural characteristics of Internet-based catering consumption during the epidemic period,analyzes the current situation and problems of digitalization in the catering industry,puts forward the concept and connotation of new digital infrastructure with “platform” as the core,explains the social value of digitalization in the catering industry,and finally provides relevant policy suggestions.
