    2019年澳门餐饮产业发展报告

    摘要

    2020年澳门餐饮业受困于入境旅客人次及旅客人均餐饮消费预期下滑,同时,本地居民在疫情期间外出用餐减少,以及用餐消费因收入受压而趋于谨慎,全年餐饮业营收呈较大幅度下跌。为降低疫情对经济及餐饮市场供给侧与需求侧的影响,以及避免一些短期打击成为中长期影响,建议政府及时在疫情期间及疫后实施积极财政政策、稳定金融市场措施,以及制定具针对性的产业/行业援助与振兴政策,以保存及发展餐饮市场的供给与需求能力。疫情也不可避免地改变了餐饮市场一些消费行为,消费者会更在意餐饮产品本身的卫生与健康因素和用餐环境的整洁、卫生条件,餐饮行业需要总结本次疫情防控经验,关注消费者消费行为的改变并予以积极配合,同时亦需提升在线与消费者对话、沟通和外卖配送的能力。

    Abstract

    In 2020,due to the expected decline in the number of inbound passengers and the per capita catering consumption,in addition,the local residents have less dining out during the epidemic period,and people tend to be cautious about the dining consumption due to the pressure on income,resulting in a significant drop in annual revenue of the catering industry. In order to reduce the impact of the epidemic on economy,the supply side and demand side of the catering market,and to avoid the medium and long-term impact,it is suggested that the government should implement positive fiscal policies,measures for stabilizing financial market,and formulate targeted policies for industrial assistance and revitalization during and after the epidemic,so as to preserve and develop the supply and demand capacity of the catering market. The epidemic situation has inevitably changed some consumer behaviors in the catering market. Consumers will pay more attention to the hygiene and health factors of the products and the tidiness and sanitation of the dining environment. The catering industry needs to summarize the experience of the epidemic containment,pay attention to the change of consumer behavior and conduct active cooperation. In addition,it is also necessary to strengthen the ability of online dialogue and communication with consumers and delivery of takeout.
