2017年,中国澳门获评联合国教科文组织创意城市网络(UCCN)美食范畴的新成员城市,成为“创意城市美食之都”,澳门可借此推广当地独特的美食文化,持续提升旅游产品的素质和游客的旅游体验,推动澳门成为具备丰富休闲体验的世界级旅游目的地,以促进旅游业的可持续发展。虽然土生菜被认定为能凸显澳门饮食文化独特性的主要元素,但目前不仅面临着食谱难以编纂和传释等问题,同时也面对旧饮食文化与新饮食融合交替的冲击等挑战。澳门应善用饮食和文化两者之间的关系,通过政府、私人企业和澳门居民相互合作,提升旅游产品的整体素质,让旅客能够体验其独特性,推动将澳门通过美食旅游包装成具有吸引力的旅游目的地,为发展多元旅游产品提供有力的资源,推动澳门经济适度多元发展。
<<Macao was nominated a new member city of the UNESCO Creative Cities Network in the field of Gastronomy. With this reputation,Macao can promote its unique local food culture,continue to enhance the quality of tourism experience,and promote Macao as a world-class tourism destination. Macanese cuisine is recognized as a uniqueness food culture in Macao. Nevertheless,it currently faces problems such as difficult to preserve and interpret Macanese cuisine recipes. It also faces the challenges of how to balance between old and new cultures in the cuisine. This chapter proposes that such tension can be alleviated through the cooperation of the public and private sectors and joining force with local residents. This tripartite collaboration can enhance the quality of tourism products,allow visitors to experience the unique facet of Macao and promote Macao as an attractive gastronomy tourism destination. The development of a well-diversified tourism product portfolio provides a powerful resource bank towards a more sustainable Macao economy.
