滇菜是云南地域文化的重要组成部分及载体,也是云南重要的旅游资源并逐渐开始形成“以滇菜拉动高原农业”的聚合发展效应。滇菜在保护民族文化、繁荣地方经济、促进区域协调发展、提升地方文化实力方面具有重要作用和多重价值。近年来,滇菜的发展受到地方政府的高度重视,但作为一个“非主流菜系”,虽然取得了显著的成就,但依然面临着进一步发展的一些瓶颈。本文总结了滇菜近40年来在原料、加工、配伍、口味及盛装方面的变与不变,在一体化融合发展方面当今面临的形势及变革驱动力,为新时代准确定位滇菜发展方向及相关企业的发展提供参考。
<<Yunnan cuisine is an essential component and carrier of Yunnan regional culture,and it is also an important tourism resource in Yunnan,which has gradually begun to form the aggregate development effect of “Yunnan cuisine driving the development plateau agriculture”. Yunnan cuisine plays an important role and has multiple values in protecting national culture,flourishing local economy,promoting regional coordinated development and enhancing local cultural strength. In recent years,the development of Yunnan cuisine has been highly valued by the local government,however,as a “non-mainstream cuisine”,although it has made remarkable achievements,it still confronts some bottlenecks in further development. This paper summarizes the changes as well as the consistency of Yunnan cuisine in raw materials,processing,ingredients,taste and dishing-out in the past 40 years,and the current situation and the driving forces of reform in the integration development of Yunnan cuisine,which provides reference for the accurate positioning of the development direction of Yunnan cuisine and the development of related enterprises in the new era.
