    改革开放40年粤菜发展与变迁

    摘要

    改革开放四十年来,随着广东省社会经济的持续、快速成长,以粤菜为代表的广东餐饮市场规模不断扩大,实力显著增强。广东餐饮市场规模从1978年的5。39亿元升至2017年的3680。33亿元,攀升约682倍,实现年均18。4%的高速增长;广东餐饮业增加值占GDP比重达4。4%;累计收入总规模占社会消费品零售总额的11。1%。四十年来,广东餐饮业与粤菜经历了市场机制建设阶段、市场快速发展阶段、市场巩固提升阶段三大发展机遇期,成为市场化程度最高、持续增长时间最长、受社会关注度最高、对广东省国民经济其他行业贡献率最大的消费领域内第一大行业,同时也为中国餐饮业整体提升起到了重要的推动作用。

    Abstract

    In the past 40 years of Reform and Opening-up,with the sustained and rapid growth of social economy in Guangdong Province,the scale of the catering market here represented by Guangdong cuisine has been continuously expanded and its strength has been significantly enhanced. The scale of Guangdong catering market increased from 539 million yuan in 1978 to 368.033 billion yuan in 2017,climbing by 682 times and achieving an average annual growth rate of 18.4%;The added value of Guangdong catering industry accounted for 4.4% of GDP;And the total accumulated income accounted for 11.1% of the total retail sales of consumer goods. In the past 40 years,Guangdong catering industry and Guangdong cuisine have gone through three important stages of development opportunities,including the market mechanism construction stage,the rapid market development stage,and the market consolidation and promotion stage,becoming the largest industry in the consumption field with the highest degree of marketization,the longest sustained growth,the widest social attention,and the largest contribution rate to other industries of Guangdong’s national economy,and has also played a decisive role in promoting the overall development of China’s catering industry.
